I just got my black GTI coupe 4 days love the car and I'm coming out of a BMW 335i. Initially it was to save money but now I feel the GTI is the total performance package for 20k less. One grip however, when I'm driving along going up a hill I like to use the paddles...sometimes I'll press the - pad to down shift and it revs up like crazy and doesn't respond when I hit the + pad to upshift. It pisses me off! What am I doing wrong? Should I always make sure to switch it over to manual mode before fooling with the paddle shifters? Other than that I love this sherman tank on wheels!

yeah Agreed. It's probably an engine protection feature. Keep in mind as well, that a DSG is no ordinary automatic. It's an Auto-clutch manual transmission.
